Overnight oats: fast, delicious, and oh-so-healthy.
We all know that breakfast is the most important meal of the day, but unfortunately, breakfast is where most of us take a wrong turn. Some of us skimp too much and don’t get enough nutrition to really get us off to a good start for the day (Pop Tarts, anyone?). Others go overboard and eat way too much fat and cholesterol each morning.
Here is a truly perfect solution to combat awful breakfast choices: overnight oats with pumpkin seeds and matcha.
This is a very tasty recipe, and it couldn’t be easier to make: everything goes in a bowl, and then into the refrigerator to set overnight. In the morning, there is a fabulously delicious and healthy breakfast waiting for you to devour.
You can serve these oats cold or warm, and you can also toss in some unsweetened coconut chips for some crunch, if texture is your thing.
The pumpkin seeds are a natural de-stresser, as is matcha green tea powder, which is why this is a great way to begin your day.
Matcha tea powder is a huge power punch for your body. Vegan Overnight Oats with Pumpkin Seeds and Matcha RecipePublished: 2016-08-23
- 4 cups rolled oats
- 1/4 cup maple syrup
- 1 teaspoon Epic Matcha green tea powder
- 1/4 cup chia seeds
- 6 cups almond milk
- 1/4 cup unsweetened shredded coconut
- 1/4 cup pumpkin seeds
- Mix all the ingredients thoroughly in a big-enough bowl. If the mixture is too dry, add more milk. (The rolled oats and chia seeds will absorb some of the milk overnight.)
- Put the bowl with the mixture in the refrigerator overnight.
- Serve the next morning with some extra nuts and milk. Yum yum!
