  • 1/2 cup cream cheese
  • 4 tablespoons creamed coconut
  • 1/2 cup sugar-free & unsweetened vanilla whey protein powder
  • 1/2 teaspoon Epic Matcha green tea powder
  • 1 teaspoon peppermint extract
  • 10 drops stevia
  • 1/2 ounce unsweetened bakers chocolate, chopped

  1. Line a loaf pan with parchment paper.
  2. In a mixing bowl, mix the cream cheese, stevia, matcha powder, and creamed coconut. It may be helpful to mix using a fork.
  3. Add in the vanilla whey protein powder.
  4. Combine until a dough forms nicely.
  5. Sprinkle the chopped chocolate over the dough.
  6. Continue kneading the dough until the chocolate is evenly distributed.
  7. Press the dough mixture into the loaf pan.
  8. Chill for 10-20 minutes—not too long. You don’t want it hard, just chilled.
  9. Turn out the loaf onto a cutting board and slice the loaf into 8 equal pieces.
  10. Enjoy! The bars can be stored in the fridge when wrapped in wax paper.
