Matcha Pine Nut Cookies Recipe

    Ingredients

  • 1/4 cup unsweetened dark chocolate
  • For pine nut cookies:

  • 1/2 large egg
  • 1/2 tablespoon ground pine nuts
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon baking soda
  • 1 cup almond flour
  • 1 1/2 tablespoons melted coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon honey
  • 1/2 tablespoon arrowroot powder
  • For matcha cookies:

  • 1 cup almond flour
  • 1/2 tablespoon Epic Matcha green tea powder
  • 1/8 teaspoon sea salt
  • 1/8 teaspoon baking soda
  • 1 1/2 tablespoons melted coconut oil
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon honey
  • 1/2 large egg
  • 1/2 tablespoon arrowroot powder
    Directions

  1. Preheat your oven to 320 degrees F.
  2. Mix all ingredients until the dough comes together.
  3. Make tablespoon-sized balls with the dough, and place them onto a parchment-lined baking sheet.
  4. Gently press the center of the balls with your thumb to make a “dip” in the dough.
  5. Add a small piece of unsweetened dark chocolate to the “dip” you made with your thumb.
  6. Bake these for 10 minutes, then reduce the heat to 300 degrees F and bake for an additional 8 minutes.
  7. Let the cookies cool, serve, and enjoy!
