This recipe for Matcha French toast sticks includes a blueberry yogurt dip, which is a perfect pairing. The yogurt dip is creamy, tangy, and lightly sweet, as opposed to drippy, overwhelmingly sweet syrup. The yogurt dip gets its sweetness from both blueberry jam and honey, which loosens the Greek yogurt into a thinner, more dunkable consistency.

Also included in this recipe are two types of coconut milk and honey as the base for an eggy custard soak. Also present are cinnamon and nutmeg, which are mixed with the Matcha green tea powder and flax seeds for added flavor, vitality, and nutrition.

    Matcha French Toast Sticks:

  • 4 pieces of thick cut white or wheat bread 2 eggs
  • 1/3 cup coconut or almond milk (the light kind, from a carton)
  • 2 tablespoons coconut milk (the heavy kind, from a can)
  • 1 tablespoon honey
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ground nutmeg
  • 2 teaspoon Epic Matcha green tea powder, sifted
  • 2 tablespoons ground flax seeds
  • coconut oil, for cooking
  • blueberry yogurt dip:

  • 1/2 cup Greek non-fat yogurt
  • 3 tablespoons low sugar blueberry jam
  • 1 tablespoon honey
  • garnish:

  • 1 teaspoon confectioner’s sugar
  • 1 teaspoon confectioner’s sugar

  1. Using a serrated knife, cut each slice of bread into three equal, long sticks, and set aside.
  2. In a shallow bowl or casserole dish, mix eggs, coconut/almond milk, heavy coconut milk, honey, vanilla, cinnamon, nutmeg, Matcha green tea powder, and flax seeds together using a whisk. Hint: You may have to whisk vigorously to get the honey mixed in.
  3. In a large skillet, heat two to three teaspoons of coconut oil on medium-high heat. Cook six French Toast Sticks at a time, making sure to cook each piece on all four of its oblong sides.
  4. Remove the sticks from the skillet when all sides have cooked to a golden brown. Set them aside on a cooling rack, then repeat this process with the other 6 pieces.
  5. To make the blueberry yogurt dip, mix the yogurt, jam, and honey together in a medium bowl.
  6. Garnish the French Toast Sticks with some sifted confectioner’s sugar and Matcha powder.
