    For the crust and the decoration strips:

  • 5 large eggs
  • 2 tablespoons sugar or sugar substitute of choice
  • 1 tablespoon psyllium husks powder
  • 1/2 teaspoon baking powder
  • For the filling:

  • 1 large egg yolk
  • 2 large egg whites
  • 4 ounces cream cheese
  • 1/2 teaspoon cream of tartar
  • 2 tablespoons sugar or sugar substitute of choice
  • 1 tablespoon Epic Matcha green tea powder
  • 1/8 teaspoon stevia extract
  • 1/2 teaspoon vanilla bean seeds
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon powdered sugar
  • For the butter topping:

  • 1 large egg yolk
  • 3 tablespoons butter
  • 1/2 teaspoon Epic Matcha green tea powder
  • 2 tablespoons powdered sugar

    For the crust:

  1. Preheat your oven to 360°F.
  2. Butter an 8” round baking pan.
  3. Butter another, smaller baking pan.
  4. Mix together the 5 eggs, psyllium husks, sugar or sugar substitute, and baking powder.
  5. Pour about 3/4 of the mixture into the round baking pan that you buttered. This will make the pie crust.
  6. Pour the rest of the mixture into the smaller buttered pan. This will make the decoration strips.
  7. Bake for 10 minutes or until a toothpick comes out clean.
  8. Allow to cool, keeping the crust in the pans.
  9. For the filling:

  10. In a medium mixing bowl, mix together cream cheese, the egg yolk, sugar or sugar substitute, stevia extract, matcha powder, and vanilla bean seeds, and vanilla extract.
  11. Separate the whites from the yolks of 2 eggs.
  12. In a mixing bowl, beat the egg whites. When they get fluffy, add in the cream of tartar and the powdered sugar.
  13. Beat this mixture until stiff peaks form.
  14. Using a spatula, carefully fold the egg white mixture into the cream cheese mixture. This mixture should remain airy.
  15. Pour this filling into the cooled-down pie crust.
  16. For butter topping:

  17. Mix together the egg yolk, butter, matcha powder, and powdered sugar.
  18. To assemble:

  19. Take your smaller batch of “crust” and cut it into thin strips.
  20. Make a criss-cross pattern on top of the pie with the strips.
  21. Spoon your butter topping on top of the pie in dollops, between the criss-cross pattern. *Note: You can also heat up the butter topping a little, making it runnier, and then simply pour it over the top of the pie. Either way works.
  22. Bake at 360°F for 20 minutes.
  23. Allow the pie cool down, serve, and enjoy! Leftovers should be stored in the refrigerator in an airtight container.
