Cranberry Matcha Green Tea Cupcakes


  • 2 1/2 cups flour
  • 1 1/2 cups raw sugar
  • 1 cup milk
  • 1/2 cup dried cranberries
  • 2 sticks unsalted butter, softened
  • 4 eggs, room temperature
  • 2 tablespoons orange zest
  • 2 teaspoons Epic Matcha green tea powder
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon baking soda

  1. Preheat oven to 350 degrees F.
  2. Line a cupcake pan with paper liners.
  3. In a large bowl combine flour, Epic Matcha green tea powder, and baking soda. Stir until ingredients are mixed evenly.
  4. With an electric mixer, cream butter and sugar until fluffy.
  5. Add one egg to the butter followed by 1/4 of the milk, followed by the flour mixture. Repeat until all eggs, milk and flour have been incorporated.
  6. Add vanilla. Mix until combined.
  7. Fold in dried cranberries and 1 tablespoon of orange zest.
  8. Pour batter into muffin cups and top each cupcake with a little of the remaining orange zest. (Don’t be afraid to take liberties! Add as much orange zest as your heart desires.)
  9. Bake for about 15 minutes or until a toothpick comes out clean.
  10. Allow to cool. Frost with matcha frosting (optional).
