- 10 eggs
- 1 cup coconut oil, melted
- 2/3 cup maple syrup
- 4 tablespoons Epic Matcha green tea powder
- 2/3 cup coconut flour
- 1 cup unsweetened coconut
- 1 cup chopped dark chocolate
- 2 teaspoons baking soda
- 10 drops liquid vanilla stevia (optional)
- Preheat oven to 375 degrees F. Grease a muffin pan with a little coconut oil.
- Whisk the eggs with the coconut oil and maple syrup.
- Add the matcha powder, coconut flour, and coconut. Mix well.
- Mix in the dark chocolate, baking soda, and stevia.
- Scoop into muffin cups.
- Bake your matcha muffins for about 25 minutes or until done, and enjoy!
