A refreshing, smooth ice cream treat using avocado, coconut milk, and matcha.

Who can ever resist homemade ice cream? This avocado pistachio matcha ice cream recipe is especially enjoyable thanks to the subtle nuances of the delicate ingredients. There are velvety notes of coconut, avocado, matcha green tea, and pistachio with every bite.

This ice cream is totally sugar-free, but you can serve it with a little honey on top if you prefer a little sweetness. On its own, it’s super refreshing, smooth and creamy, but doesn’t feel heavy or unbearably sweet. In a word, it’s perfect.

Many of the ingredients here are packed with good-for-you nutrients, such as the avocados, pistachios, and of course, the matcha tea powder.

The avocados contain lots of good potassium, fatty acids, and fiber. They can lower your cholesterol and lend a helping hand to eye health. They’ve also been linked to cancer prevention and arthritis relief.

Pistachios are heart-friendly, and they also contain antioxidants. They defend against diabetes, are a good source of fiber, and are said to have aphrodisiac properties.

As for the matcha green tea powder, it also contains plenty of antioxidants, which help prevent diabetes, heart problems,  stroke, Alzheimer’s disease, and some types of cancer. Matcha powder also gives you eye-opening energy while keeping you relaxed.

Avocado Pistachio and Matcha Ice Cream

Avocado Pistachio and Matcha Ice Cream

Equipment Needed:

  • Jar
  • Stick/immersion blender
  • Container with a pouring spout
  • Ice cream maker

    For the mayonnaise:

  • ½ cup coconut oil
  • ½ cup avocado oil
  • 2 tbsp apple cider vinegar
  • 4 egg yolks
  • For the ice cream:

  • 2 cups full-fat coconut milk
  • 2 tablespoons grass-fed gelatin
  • 1 tablespoon vanilla extract
  • 1 tablespoon Epic Matcha green tea powder
  • 1/2 teaspoon ground Ceylon cinnamon
  • 2 large ripe avocados
  • 1/2 cup pistachios, chopped
  • 1 pinch Himalayan salt
  • Honey (optional)

    For the mayonnaise:

  1. Add the coconut oil, avocado oil, apple cider vinegar, and egg yolks to a jar that is barely wide enough to accommodate the head of your stick blender.
  2. Let that sit just long enough for the egg yolks to settle comfortably at the bottom of the jar, underneath the oil (a few seconds).
  3. Insert your stick blender and push it all the way down until it makes contact with the bottom of the jar, then push the power button and do not move the blender for a full 20 seconds. As the oil starts to emulsify, start moving your blender around and up and down just to make sure that every last bit of oil gets well-incorporated.
  4. You should now have creamy mayonnaise. Set it aside.
  5. For the ice cream:

  6. Add the coconut milk, gelatin, matcha powder, vanilla, cinnamon and salt to a large container, preferably one with a pouring spout.
  7. Blend everything with your stick blender until you have a completely smooth mixture.
  8. Add the mayonnaise you set aside and the flesh of the avocados, then blend again until smooth and well-combined.
  9. Transfer this mixture to your ice cream maker.
  10. Churn according to the manufacturer’s instructions. (This shouldn’t take much longer than 5–7 minutes.)
  11. When the ice cream is almost set, add the chopped pistachios and continue churning until the nuts are evenly distributed.
  12. When you serve, drizzle a little honey on top.
  13. Enjoy!

Yield 8 servings


You can serve this ice cream immediately as a soft serve, or you can transfer it to an air-tight container and put it in the freezer for a couple of hours to firm up. However, be mindful to not freeze it for more than a couple of hours, or else it becomes too hard to eat.
