Vegetarian Christmas Tree Matcha Brownies RecipePublished: 2016-12-16
- 1 cup oat flour
- 1 1/2 cup apple juice or white grape juice
- 12 pitted Medjool dates
- 1 teaspoon baking powder
- 1/2 cup cacao powder
- 1 teaspoon vanilla extract
- 1/4 cup cacao nibs or vegan chocolate chips (optional)
- 1 teaspoon Epic Matcha green tea powder
- 6 ounces dairy-free yogurt*
- Goji berries to decorate
(for the brownie)

*Be sure to use a sweetened yogurt. Or, if you prefer, you can use whipped coconut cream instead.
- Preheat oven to 350ºF.
- Blend the dates and apple or white grape juice.
- In a large mixing bowl, combine the flour, cacao powder, baking powder, and vanilla. Add the date mixture and mix together.
- Fold in the cacao nibs or chocolate chips if you’re using those.
- Spread into an 8×8-inch square baking pan lined with parchment paper (or lightly oiled). Spread evenly.
- Bake for 20 minutes at 350 degrees.
- Cool brownies or even chill them in the refrigerator before cutting them into tree shapes.
- Whisk the matcha tea powder into the yogurt until it’s well-blended and nice and green!
- Frost the brownies and sprinkle on the goji berries.
- Serve and enjoy!
