Paleo Cashew Coconut Energy Matcha Balls Recipe
    Ingredients
  • 1 cup raw cashews, soaked for 8 hours
  • 3/4 cup date paste or pitted dates, softened in warm water for a few minutes
  • 3 tablespoon coconut oil
  • 1 cup shredded unsweetened coconut (1/4 cup reserved for rolling)
  • 1 tablespoon Epic Matcha green tea powder
    Directions
  1. Add all ingredients to a high-powered blender or food processor, and blend until fully blended.
  2. Roll into tablespoon-sized balls, and coat with extra coconut.
  3. Allow at least 1 hour to set in the fridge before enjoying.

Yield 12 balls
