Matcha Waffle Ice Cream Sandwiches

Refreshing ice cream sandwiched between fluffy, crispy matcha waffles.

These fluffy, crispy waffles are also nut- and gluten-free, and filled with matcha green tea powder. Go with a dairy-free, low-sugar ice cream, and you’ve got yourself a very tasty, health-conscious snack. You won’t even miss using cookies as the sandwich!

Matcha Waffle Ice Cream Sandwiches Recipe

    Ingredients
  • 2 eggs
  • 1 cup cassava flour
  • 2 tablespoons collagen peptides
  • 2 tablespoons pasture-raised gelatin
  • 2 teaspoons Epic Matcha green tea powder
  • 1 tablespoons baking powder
  • 1/2 teaspoon sea salt
  • 2 tablespoons coconut sugar
  • 1/2 cup ghee, softened
  • 1/2 cup full-fat canned coconut milk
  • 1 cup water, divided into 1/2 cups
  • 2 pints ice cream, softened
  • Ice cream toppings of your choice
    Directions
  1. Preheat your waffle iron. *Note: Every waffle iron is different. Test with medium heat first, then increase the temperature as needed.
  2. Whisk together cassava flour, collagen, gelatin, matcha tea powder, baking powder, sea salt, and coconut sugar in a large bowl.
  3. In another bowl, combine the eggs, ghee, coconut milk, and 1/2 cup water.
  4. Add the wet ingredients to the dry and whisk to combine, being careful not to over-mix. Add a little water as needed, based on the mixture’s consistency. You want the consistency to be thicker than pancake batter, but still be able to pour it.
  5. Add about 1/4–1/3 cup of waffle mix to your preheated waffle iron.
  6. Cook until golden brown and crispy, then let cool.
  7. Line a cookie sheet with parchment paper, and spread the softened ice cream into a rectangle about 4 inches high, 8 inches wide, and 2 inches thick.
  8. Sprinkle with your toppings of choice.
  9. Use the sides of the parchment paper to create an “edge” to the ice cream, and place another sheet of parchment on top to smooth it out. Leave the parchment paper on.
  10. Place in the freezer to harden.
  11. Once the ice cream has hardened, remove from the freezer and slice the ice cream into two even squares, cutting the parchment paper with the ice cream (don’t remove it beforehand).
  12. Remove one side of the parchment, and place the ice cream on top of a waffle. Remove the other side of the parchment, and top with a second waffle.
  13. Cut in half diagonally, and enjoy your matcha waffle ice cream sandwiches!
