When my husband and I went to Japan, I was astounded by how delicious the food was. Everything we ate excited my taste buds and stole my heart. Specifically, matcha green tea recipes seemed to be at every turn. Desserts seem to get better when matcha green tea is involved. I love the freshness matcha adds to sweets.

After giving it my all with just about every dessert under the sun, I stumbled upon matcha cheesecake recipes and set out on a mission to make the best matcha cheesecakes on this side of the nation. This adventure resulted in these absolutely delicious sesame matcha cheesecakes.

This recipe makes about four, half-inch mini matcha cheesecakes. It’s perfect for dinner parties and even better to share with good friends. I’ve found it’s perfect after a fresh dinner or hot cup of ceremonial matcha tea.

Sesame Matcha Cheesecakes
    Ingredients

    For the Crust:

  • 1 cup animal cracker crumbs
  • 4 tablespoons butter, melted; plus more, room temperature, for the pans
  • 3 tablespoons granulated sugar
  • ¼ teaspoon fine sea salt
  • 3 tablespoons black sesame seeds, toasted
  • 2 8-ounce packages cream cheese, room temperature
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • ⅓ cup sour cream, room temperature
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract
  • 2 large eggs, room temperature
  • 2 tablespoons Epic Matcha green tea powder, plus ¼ cup for dusting
  • ½ cup black sesame powder
  • For the cheesecake filling:

  • 2 8-ounce packages cream cheese, room temperature
  • ¾ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • ⅓ cup sour cream, room temperature
  • ½ teaspoon pure vanilla extract
  • ½ teaspoon pure almond extract
  • 2 large eggs at room temperature
  • 2 tablespoons Epic Matcha green tea powder, plus ¼ cup for dusting
  • ½ cup black sesame powder
    Directions
  1. Preheat your oven to 350 degrees.
  2. Butter the sides of 4, 4-inch springform pans.
  3. Wrap the exterior of the pans in a layer of foil to protect your oven from spills.
  4. Process or smash the animal crackers until texture is very fine.
  5. Add butter, salt, and sugar and pulsate or mix until well combined.
  6. Divide the crumb mixture evenly amongst the pans to create the crust for your cheesecake.
  7. Place your pans on a baking sheet and bake until the crust is golden brown. This normally takes about 15–18 minutes. Set aside to cool.
  8. In a separate bowl, beat the cream cheese until it’s light and fluffy.
  9. In a smaller bowl, combine sugar and flour. Gradually add in sugar mixture to cream cheese and mix until smooth.
  10. Divide cream cheese into different bowls. Add Epic Matcha powder to one and sesame seeds to the other. Stir both gently.
  11. Put a layer of the sesame cream cheese into each of the pans.
  12. Repeat the process with the matcha cream cheese.
  13. Put springform pans inside of roasting pans and surround them with boiling water to the halfway point on the pans.
  14. Bake for 15–20 minutes.
  15. Turn off the oven and leave the oven door cracked for about 45 minutes.
  16. Let cakes cool completely on a wire rack.
  17. Refrigerate for 4 hours uncovered.
  18. If you want an extra kick, dust the top with matcha.

Remember, cheesecakes are quite sensitive. Try to eliminate foot traffic through your kitchen. Additionally, you must cool your matcha cheesecakes to room temperature before putting it in the refrigerator. Taking it from the oven to the fridge without cooling it first will result in cracks in the cream cheese layer.

These matcha green tea cheesecakes appeals to all your senses. Though it takes a little while to make, the taste is well worth the wait.
