    Ingredients

    (for the pancakes)

  • 2 eggs
  • 1 large mashed banana
  • 1/2 cup hemp protein
  • 1/2 cup blueberries
  • 3/4 cup coconut milk
  • 2 heaping tablespoons coconut flour
  • (for the “nice cream”)

  • 2 cups frozen banana chunks
  • 1/4 cup coconut milk
  • 1 teaspoon Epic Matcha green tea powder
  • 2 tablespoons vanilla extract
    Directions

    To make the pancakes:

  1. Mix all of the pancake ingredients, except for the blueberries, together in a large mixing bowl until well combined and smooth.

  3. Add the blueberries and combine with the batter.
  4. Using a 1/4 cup measure, scoop the batter into a large oiled frying pan and cook until you can gently lift the pancake from the pan without making it crumble.
  5. Flip the pancakes and cook for another 2–3 minutes.
  6. Serve pancakes with the “nice cream” and your other pancake topping favorites!
